Asparagus is a superfood loaded with nutrients and it is a very good source of fibre, folate, vitamins A, C, E and K. Prawns are a good source of protein and omega- 3 fatty acids, both of which can aid in a weight loss diet. They can be eaten and prepared like shrimp. Prawns have nearly 10 grams of protein per two ounce serving.

Ingredients: (1 serving)
- 8-10 stems of asparagus
- 3 tiger prawns fresh (or defrosted)
- 4-6 cherry tomatoes
- 1 cup spinach
- salt and pepper
1. To cook the asparagus, trim the ends then place info boiling water for 1-2 minutes until cooked but still with a bit of bite (al dente). Then remove from the water and put into ice water to stop it cooking anymore and to keep the green colour.
2. Heat pan on high till it`s hot. Add a little bit of olive oil to the pan and swirl it around the base. Add the prawns and cook for about 2-3 minutes or until they change colour to pink. Prawns cook very quickly. When they are cooked, remove them and drain them on absorbent paper before serving.
3. Mix spinach and tomatoes and serve it.
